Pie-making Demo

Pie Crust Demo Class tonite. It was a real success. It was great to feel the complete confidence of all the presenters... and know that what they each did to make great crust was very different - and it worked very well!

Erin Zinkham, Gaynor's pastry chef, went first making the crust from the very start- flour, salt, butter and ice water.

She was followed by Barbara Ferguson, rolling out a pre-made crust... very, very technical and interesting. Her recipe is VERY different than Erin's (flour, water, vinegar, sugar, salt, egg yolk and ice water).

She was followed by Shelly Dinger, who did the whole pie... and since the first two had talked about butter, she used Crisco, two knives, water and her bare hands (Barbara used a KitchenAid with paddle, Erin used bare hands entirely).

Then I closed with a demo of my oil/milk crust, rolled out between sheets of wax paper on a granite slab! Erin had made a pie to eat and so had I. I was glad to be able to show that my most peculiar recipe was both fast and - best of all - produces a fabulously flakey crust, in spite of violating all the rules!

We had about sixteen people all told, just right for eating two pies. Great fun. We'll definitely do it again.I hae some nice photos.
