--Star pickler, Post-Gazette's Miriam Rubin, teaches Grandma Rubin's Dills.
Everyone makes a jar to take home.
--Susie Treon's Old-Fashioned Sweet Pickle Chips
--Paul Bertolli's Pickled Wax Beans and
--Pickled Asian Eggplant
Pickling faculty includes Nancy Hanst, food-teacher/writer extraordinaire and the Slow Food team.
All recipes are included.

MeatTHINK: STARTS IN AUGUST

Explore our relationship to the meat we eat. See butchering, learn cuts.
Beef, pork, lamb, chicken. Know why local/pastured and humane killing mean something.
Hear from old school and "new wave" butchers, chefs, farmers, meat purveyors.

August 6 & 7:

PASA's State-wide Grass-Fed Beef Burger Taste-Off and a Beef Butchering Master Class co-sponsored by SFP, at Jamison Farm in Latrobe. Burger Picnic Saturday at the Farm.

Sunday Aug. 29:

Chicken: The Farmer's Wife/Green Circle Farm Demo: humane killing. Plucking, cleaning, preparing for cooking. Organic picnic follows.

Saturday, Oct. 30:

Pork: Strip District Meats' Ray Turkas Jr. will demo butchery of a Heilman half hog. Meal afterward at Ray's Cafe next door.

Date TBA:

Lamb: Halal and Kosher. Butchering skill and tradition. Salem's Market in the Strip. Lamb roast follows at the market.
